Cauliflower Crust Pizza (Chicken Parmesan Style)
Pizza is the staple of most American’s diet. Too bad it’s pretty much one of the worst things you can eat, well, until now. A lot of people give me a funny sort of look when I tell them I make a pizza with a crust that’s made out of cauliflower, but it’s really quite great, and relatively easy to make too. It’s also a pretty great way to feed veggies to people without them ever knowing.
- 1 Bag of frozen steam in bag cauliflower (I used birds eye garlic cauliflower so that I didn’t need to season it.)
- About 1/3 cup tomato sauce (I used Classico Tomato and Basil which is also a healthier sauce than many of the others)
- 1 8 ounce bag of mozzarella cheese
- Italian Seasoning
- Parmesan Cheese
- 2 egg whites
- 2 chicken breasts
- Minced Garlic
Cook the cauliflower according to the directions on the bag, and then either throw into a food processor, or mash by hands. Mash or process it until you get a mush that you can compact together. Put the cauliflower into some paper towels, and squeeze out the moisture, replacing the paper towels several times, until you just about have all the water you can press out of it,
Once it’s dry combine it with the egg whites, and 4 ounces of Mozzarella. Flatten it out on a pizza pan until you get what resembles a thin crust pizza. Bake this at 450 degrees for 20-25 minutes. While the crust is cooking, cook the chicken in a pan on the stove with some minced garlic and Italian seasoning sprinkled on.
Once the crust is golden brown and delicious looking, take it out and spread on the sauce. Put the chicken on, and then sprinkle a generous amount of Parmesan cheese over it, finishing it off by sprinkling the rest of the Mozzarella on top. Bake for another 5 minutes or so, and then enjoy!
